The flowing design is based on a modern interpretation of Japanese culinary culture and tempts with its atmosphere. The organic structure consisting of felt- and spruce fins flows through the dining area and playfully covers ceilings, walls, and columns. The room becomes a perceptible sculpture with the guest in the center. Following the Japanese aesthetics, contrasts between dark furniture and bright spruce fins create an even balance.

Summary
Over 2000 wooden fins as well as acoustically effective felt fins were combined in the restaurant to form a complete sculptural structure. Together they develop a flowing seating ensemble that stretches from the ceiling over the walls down to the floor. Then it rises again as seating furniture. Close to the entrance area, the structure pulls down from the ceiling in the form of a drop sculpture to playfully cover the column
The colors of the interior design show a high contrast through the slate-colored screed and the black furniture, as well as the light spruce wood, following the subtle associations with the Japanese aesthetics. Part of the new concept is also the lighting design, which relies on LED lights that are installed between the fin structure and follow the wave structure. Simple designed black cylindrical pendant lights are placed over the dining tables and provide pleasant accents. Especially in the evening hours the lighting highlight once more the organically shaped design.
The initial situation on-site was a former bank branch in the city center of Nuremberg, Germany with large windows and a high ceiling at groundfloor, as well as the hotel above with all its daily operations which must not be interrupted. Therefore, the task was not only to create the design of the restaurant but to develop a highly functioning concept that ensured a smooth operation of the hotel as well as continuing all processes of the different disciplines on-site during special circumstances due to the pandemic.
Key objectives for sustainability
The felt fins not only ensure excellent acoustics. Much more, they make a major contribution to sustainable design through a smart upcycling process from PET bottles and, also contribute to the feel-good atmosphere in the restaurant through moisture-regulating properties. This ensures an unforgettable ambiance for all guests and the restaurant team. Furthermore the felt fins are enlightened by energy saving LEDs.
Key objectives for aesthetics and quality
One of the key objectives was to place the guests at the center of the walk-in sculpture. They can choose between a more intimate seating area in the back and an open atmosphere in the front bistro area. The structure embodies our vision of striking graphical and iconic design. It stimulates the guests vision through the flowing structure as well as the smooth haptic can be felt on the wooden fins.
Key objectives for inclusion
In terms of inclusion the restaurants flooring is a smooth screed floor without any steps so therefore wheelchair accessible. The restaurant itself offers flexible furniture as well as an generous floorplan without any narrow areas which is able to include people with disabilities as well as smaller and bigger groups of guests. Furthermore the sanitary facilities are barrier-free.
Results in relation to category
The design intention for the restaurant was to create a form of symbiosis of cuisine and architecture in a sustainable way. We understand architecture as part of the culinary experience. Every guest can immerse themselves there for a while, let their gaze wander through the spatial continuum and and let the soothing atmosphere work its magic on them.
How Citizens benefit
We strongly believe that well-known standards in gastronomy can be changed into something that creates a holistic experience. In this case the restaurant not only provides this experience for tourists and citizens but also contributes to Nurembergs diverse range of culinary options.
Innovative character
The flowing structure was designed with generative algorithms that created the 3D geometry. Thereby over 2,400 individually CNC-milled wooden fins could be produced. Both spruce and felt fins were numbered consecutively and installed in a systematic order.
