Summary
A project framed in the family-owned Pazo Quinteiro da Cruz, with a philosophy based on sustainability, to preserve the biodiversity of the environment and spread respect for nature. Growing up among camellias and being a doctor by profession have been the keys to designing the Camellia sinensis tea garden, the tea plant, the second most consumed drink in the world after water, one of the 50 medicines of traditional Chinese medicine. Tea stimulates the prefrontal area of the brain which helps to be aware of "the here and now" and helps in reconnecting with nature.
General objective: economic diversification of Camellia sinensis to boost the agri-food, tourism and industrial sector based on sustainability and circular economy and to promote the revitalisation of this rural area, in the interior of Pontevedra in the Salnés Valley.

Specific objective: To disseminate the tea culture and sustainability through the artisanal production of a quality tea, experiences around tea, a tea of "Galicia" origin, from the plantation of Pazo Quinteiro da Cruz in Ribadumia, totally artisanal, both in its harvesting and in its production. An organic tea that can be tasted in a Tea Garden and where you can live the experience of harvesting and processing by the hand of its producer. A commitment to reconnect with nature, improving people's quality of life.

Pazo Quinteiro da Cruz tea garden: a specific location has been selected, a tea garden surrounded by fruit trees and camellias in the setting of a botanical garden of international excellence. Its "terroir" and the pollination of the bees make the tea of great aromas and quality.
The Camellia sinensis plantation was started in 2008. It takes 5 years before tea can be harvested. We opted for organic cultivation; its harvesting and processing is entirely handmade, following the traditional Chinese and Japanese methodology, with our own method, developed thanks to the impulse of valuable tea experts who have accompanied me on this path.
Thanks to permaculture and circular economy as a basis for the design of the plantation, I have been able to develop different valorisations of the tea plantation itself, improving its cultivation, its productivity and reducing water consumption. The aim is to improve the quality of life of people and the planet, with several objectives: the production of tea, research into its properties as an organic colouring agent and source of ultraviolet protection, the valorisation of the bark of its fruits, the valorisation of pruning and the dissemination of its culture. Although tea is the second most consumed drink in the world after water, in Spain and in Galicia in particular, there is no tea culture. Many people who visit us throughout the year are surprised that all the tea in the world is obtained from Camellia sinensis. There is no waste in tea, everything can be recovered and used, and its fire-breaking properties make it an alternative in the fight against fires, especially in rural areas. Sustainability through the use of permaculture and the circular economy helps to transmit the knowledge of how tea is planted, harvested, processed and how it should be consumed, for that change of mentality towards a culture of sustainability and respect for nature so necessary in our society.

Eco-design is the basis of the development of the project in all its dimensions, of the different experiences that have been created, with a common objective of disseminating the tea culture, its benefits and improving the quality of life of people by transmitting the culture of sustainability and care for nature.
More and more people are demanding different experiences around tea, and every day we are visited by people from all over the world. We talk about botany, diversity, sustainability, integration and cohesion of cultures, for example: the fusion of Asian and Celtic culture in tea ceremonies or the "feel the camellia" days, an immersion in nature with the camellia as a common thread that we celebrate every year between March and April, guided visits to the garden for large groups, small groups, families and individuals. Also master classes in hotel and catering schools in Galicia, different parts of Spain, Italy and France. We have already organised 2 circular economy forums, different workshops, concerts in the garden, tea afternoons, forest baths or shirin-yoku. Tastings and pairings and training around tea and its dissemination, or the day that has been made for the day of the Historic Gardens of Europe of how a historic garden contributes to social and environmental awareness for a more sustainable Europe, with the tasting of our tea as a demonstrator of sustainable production through the circular economy.
This year the project has been awarded at The Leafies UK International Tea Awards which celebrate the diversity of artisan teas from all production areas, recognise the world's best teas and tea gardens that represent a commitment to sustainability and community empowerment initiatives, environmental protection, innovation, creativity and education in the world of tea.

Key objectives for inclusion
The Tea Garden surrounded by bamboo emulates a Samurai tea house, with the symbolism of the lower door lintel to enter in a humble disposition, people would come to enjoy music, conversation, company, reading and tea and an atmosphere of Harmony was generated, values that I try to transmit to the people who visit us, this life project, is defined by the phrase Tea, the drink that gives refreshment to the soul.
Throughout history the camellia has been a symbol of freedom; slaves in Brazil used the white camellia as a symbol of freedom, a symbol of the abolition of slavery, the last country to abolish it. In New Zealand, women's rights activist Kate Sheppard, in the 19th century, used the white camellia in her fight for women's suffrage, the first country where women had the right to vote. This symbolism helps to convey the values of equality, equity, accessibility and affordability. Collaboration with the NGO "entreculturas", the campaign "the light of the girls" not a shadow of violence in girls, a global campaign to give visibility to this problem, where local authorities, educational and social organisations and collectives linked to women and also with a connection from Guatemala were brought together, with the aim of giving visibility to the different forms of violence exercised against girls in so many parts of the world.
I have designed a specific tea to spread this campaign, a handmade, organic, ecological green tea, flavoured with camellia petals of all colours "The Light of the Girls" tea, which transmits the symbolism of this flower. A solidarity tea that was created to disseminate and support this campaign and with the intention that in the 21st century the camellia represents the symbol of the diversity of human nature, each person sees life from a different perspective, colour or tone, when we see this diversity with respect we can feel the richness that it represents for our society.
Throughout history the camellia has been a symbol of freedom; slaves in Brazil used the white camellia as a symbol of freedom, a symbol of the abolition of slavery, the last country to abolish it. The Tea Garden is already in itself an outcome, a place for connecting with nature, for education and culture in the paradigm shift towards new behaviours and values.
A space in nature that helps to educate people of all ages, in a participatory way as they experience tea picking, brewing and tasting and feel the sustainability. During the guided visits, botanical, sustainability and biodiversity criteria are transmitted, the senses are stimulated, the aromas are felt, the tea is tasted, which provides health benefits and helps to enter into consciousness, into the here and now, experiencing nature, reconnecting with it.
The result of the project are the different teas that I make, one of the teas is Nélida's tea to spread thoughts, words and experiences that she transmits very well in the pages of her books. Nélida Piñón was a universal Brazilian writer and her last interview on feminism, published in the magazine Lengua.

In collaboration with Turismo de Galicia Tourist train route (visit to the garden and tea tasting, 400 people of all ages and families have enjoyed the experience) and also people from all over the world visiting us.

How Citizens benefit
It is a project born out of a personal concern to improve people's quality of life without damaging the planet, the Garden is open to visitors, to research and to disseminate the values that our parents instilled in us, the love of nature, sustainability. We live in a world far removed from nature, forgetting that we are part of it. Being a doctor by profession and growing up surrounded by nature has helped me to open my heart's eyes and see life with a holistic vision, from equity, equality, the fight for women's rights. Being a woman has allowed me to understand this need and help to make it visible. I organise free access events for different causes, here is the headquarters of women in equality in Pontevedra of which I am president and we carry out different activities with the local, provincial, regional and national community. Innovative character
Tea plantations in the world are generally only designed for tea production. My project has a multidisciplinary approach and that is the innovative dimension, I am going to tell you about the Tea Garden, a small camellia sinensis plantation that thanks to its size allows the whole process to be handmade, it is about getting a quality tea and innovating in the process, since I started until today I have been improving the processing and the use of the temperature to enhance the benefits that tea has. My project is based on the economic diversification of Camellia sinensis with the aim of improving the quality of life, sustainability and the dissemination of the tea culture, promoting the agri-food sector with the production of different types of tea: green, white, pruned, fermented, blends, promoting the industrial sector with the production of different products, cosmetics, aromatherapy, different lines of research: textile with sun protection factor through tea, different valorisations as from the shell of the seeds you can get prebiotics, or the study of the impact of climate change on tea production and the promotion of the tourism sector with the generation of different experiences around tea and visits and thus the revitalisation of the rural area in which we are a municipality of 5000 inhabitants, that only exploits the wine sector and with this project is given more visibility and attraction for people to visit this area.

In the design of my project there are several disciplines to take into account, the philosophical one: reading the work of Lu Yu, who wrote the first tea book, year 760 A.D. where underlies the idea that we have to take care and celebrate all the details of life, to try to find beauty in everything and to seek tranquillity and harmony in life. My intuition led me to read Cha Jing, the tea classic: to feel the call of tea and to travel to the areas where it is grown, undertaking a research project through the wisdom of the farmers themselves. Getting to know the growing areas, types and characteristics of tea, the harvesting process, how to drink it, the culture of tea is the beginning. Growing up among the camellias of Pazo Quinteiro da Cruz has undoubtedly been the basis for developing different projects around the camellia and specifically this project around the cultivation of Camellia sinensis (the tea plant) and what was initially a philosophical discipline became humanistic, scientific and social. Being the first tea producer in Spain, a country where there is no tea culture, was not easy, travelling and contacting different people in the world of tea, visiting the Azores, where the first tea plantation in Europe from the 19th century is located, helped me to be more confident in my project and to develop my own methodology based on Chinese and Japanese tradition. The country that transformed me China, the cradle of tea, getting to know Yunnan, its people, its way of understanding life, has opened my eyes to the dimension of different cultures, with "nature" as a nexus. I am a ceo in circular economy, I am passionate about permaculture, learning from nature, being guided by passion, creativity and looking at life in a positive way, finding the best wherever you are, this is how the tea garden has been growing, with wonderful people to share knowledge, doubts, insecurities and growing with a project that started at a crucial moment in my life and transformed me
Methodology used
The focus of my project is firstly the commitment to the United Nations 2030 agenda and the achievement of the Sustainable Development Goals, the circular economy, permaculture, biodiversity, in short, sustainability.
As I said in the innovation part, it is this holistic vision that defines the project, firstly it was the study and knowledge, as there were no plantations in Spain or in Galicia in particular, deciding the location of the plantation for the tea garden has been fundamental for the development of the project, it is a crop and I needed the location to allow it to be sustainable and that the location itself would have a direct impact on the quality of the tea. I am referring to the "terroir" the place where the tea garden is located and what is around it, in this case it is surrounded by fruit trees, fig trees, camellias and roses and in the forest of the Pazo Quinteiro da Cruz we have beehives and the pollination of bees and other pollinators is vital in the aromas that the tea will have.

The circular economy proposes a new model of society that utilises and optimises the efficient use of resources. based on nature and life cycle principles.

How stakeholders are engaged
Being the first tea plantation in Spain, I had to open many doors to be able to advance with the project as this type of cultivation was not foreseen. The camellia is the flower that represents Galicia and since the 19th century it has been part of the garden of the Pazo Quinteiro da Cruz and other Galician and European gardens. Since 2000 I have been studying and planning the plantation, which became effective in 2008. Little by little I have been progressing, seeking advice, the first thing was to make the file to get the registration of agricultural exploitation, since it was not contemplated, I have worked with the department of rural environment of the government of Galicia to be able to have it, then I had to work with health to get the sanitary registration, with the Treasury the epigraph so that the production could be managed from the company that manages it Tsubaki Diseño SLU and with rural environment the part of food to request the certification of food craftsmanship, not foreseen in the legislation. The garden is part of the route of historic gardens of Europe, of Galicia and of the camellia route, which allows us to attract tourism from different parts of the world to our garden. I have been collaborating with Turismo de Galicia and they have helped me with the European legislation so that we could opt for this certification. It has been a complex process, a long journey, which has served as a learning experience and has opened doors so that other people who want to opt for a similar project can do so.
I have started the research part with the University of Valencia, developing the textile with solar photoprotection, I have presented this part of the project to the first contest of Natural Materials of the Xunta de Galicia, being a finalist and the textile is already part of the Materioteca de Galicia where the different innovations in materials are collected.

Global challenges
The tea garden is a camellia sinensis plantation, which can be planted close to other crops and is a good firebreak, a good option to tackle fires especially in rural areas. Working on sustainability and disseminating it helps to transmit these values to society and small changes in many places can change the world, in the situation we are in where there is an urgent need to address climate change, the tea project helps in that understanding and in that change of thinking.
We are part of Slow Food international and in the Santiago convivium at regional level with those we work with to promote local for global change, food is fundamental, both from the action of health and sustainability and having the possibility of KM0 and betting on it is a good option to reduce our carbon footprint. The whole process is handmade and we use permaculture, a concept that is based on the respect for natural resources, at its base are the principles of the natural ecosystem where we try to follow the natural environmental rhythms appropriately, without forcing them at any time. Permaculture is the art of designing living spaces, functional territories, professions and lives rich in meaning, inspired by nature. It is also about caring for human beings, caring for the earth and sharing equitably.
We are committed to the 2030 agenda and the circular economy, betting on the life cycle, planting tea trees have joined the challenge of planting trees at COP25 and this year from the company that manages the tea plantation TSUBAKI DISEÑO SLU, we have signed the letter to the Open Letter of the global medical and health community to urge the presidency of the COP28 and world leaders on the need to eliminate the use of fossil fuels. Our commitment is global with actions from the local level.

We are part of Slow Food international and in the Santiago convivium at regional level with those we work with to promote local for global change, food is fundamental, both from the action of health and sustainability and having the possibility of KM0 and betting on it is a good option to reduce our carbon footprint. The whole process is handmade and we use permaculture, a concept that is based on the respect for natural resources, at its base are the principles of the natural ecosystem where we try to follow the natural environmental rhythms appropriately, without forcing them at any time. Permaculture is the art of designing living spaces, functional territories, professions and lives rich in meaning, inspired by nature. It is also about caring for human beings, caring for the earth and sharing equitably.

Learning transferred to other parties
My project can be replicated and transferred to other places partially or in its entirety. The scalability of a project is more feasible when the project to be scaled is protocolised and has a business model structure.
I have been selected by the Juana de Vega Foundation, which promotes knowledge, conservation and development of the rural environment of Galicia, to participate in the first phase of the 11th edition of the Agri-Food Business Support Programme in the consolidation modality. Here in the heart of the Foundation and with specialised consultants I have worked on the key elements of the business idea and where I have developed the structure of the business model: value propositions, customer relations, channels, key aspects and financial structure.
The value propositions can be replicated. In an artisanal plantation, producing quality tea is a value to be highlighted, being certified with the food artisan label gives the consumer guarantees that the products are handmade and respect the sustainable philosophy. I am a member of the association of tea producers in Europe (https://tea-grown-in-europe.eu) and in October I presented my project at the Pyrenees meeting, they were surprised by the lines of development of my project, my business model, because it is different and has more impact. They didn't know about certification and they want to do it, as this way they can differentiate themselves from industrial teas.
In the lines of research that I have underway, in the textile project with solar photoprotection through tea, we are in the last phase to take it to industry and we need to know if we have the same results in other plantations and now they are going to be incorporated.
